Staying Warm and Cozy

Kids were off today. Wind had subsided. Snow was still falling, making everything sterile and quiet. I love this kind of winter weather, especially when I’m inside with a cup of warm freshly brewed tea, and a bread pudding in the oven, filling the air with vanilla sent.

This morning resembled a winter wonderland and I was inspired to make something cozy and slow for breakfast. We had bought an imported Italian cake yesterday and still had some left overs. Three quarters to be exact.

This particular cake, named Panettone, coming all the way from Italy, is already a bit dry when you buy it and keeping it for later didn’t appeal to me for it will only get harder! So, I used it in lieu of plain bread to make bread pudding: “Pane” in Panettone is Italian for “Bread”. Usually this cake is made with raisins, cranberries, or orange peel, but the one I had was plain. I used my own dry fruit and walnuts for the pudding, making this recipe is another Tutti-Frutti breakfast!

{5}Panettone Bread Pudding with Dry Fruit and Walnuts

Panettone cake, cut in 1 inch cubes

4 whole large eggs

1 cup milk

1 cup heavy cream

¼ cup white sugar

pinch of salt

½ cup chopped walnuts

1 cup mixed dry fruit

Some confectioner’s sugar for serving (optional)

1. Heat oven 350°;

2. Arrange chopped bread, dry fruit and walnuts in a baking dish (lasagna pan will do);

3. Beat eggs in a bowl with sugar and salt, add milk and cream and mix it all until combined. Pour egg mixture over cake;

4. Bake for 40 minutes or until the toothpick inserted in the center of the dish comes out clean;

5. Serve in a bowl dusted with a little bit of confectioner’s sugar.

Eatable Hand Care


If during summer time we focus on the condition of our feet, then during winter it is out hands that need most of our attention.

I am sure many of us aware and use all sorts of hand creams and moisturizers. For me, there is one little problem with store bought products: I don’t like how they taste! But from the constant hand washing that is drying my skin to scales during cooking, I need moisturizing most.

There are plenty of hand care products made with natural ingredients on the market. But I think, if you can’t eat them, why use them on your skin especially when you’re dealing with food?!

So, I’ve decided to try some EATABLE hand treatments from the kitchen:


1. Butter- make a clarified butter by melting unsalted butter over low heat. While cooking butter, skim the foam. Cool this foam a little bit and use on your hands. It penetrates and moisturizes skin very good and can even be somewhat waterproof;


2. Olive oil- use extra virgin olive oil since it contains more vitamin E. Rub into your hands and pat any excess with a paper towel;


3. Sour cream- use whole (not low fat) sour cream to rub into your hands. It penetrates better than oil, moisturizes and freshens up your skin;


4. Other oils- you can also use fancy cooking/salad oils such as almond, grape seed or sesame. Don’t forget to pat your hands dry with paper towel since these oils tend to run.


All of the above fats could be used and overnight treatment. Just use cotton spa gloves or just a pair of cheap stretchy ones after you rubs the oil on your hands, so your sheets will not stain.



Если летом нам важно состояние наших ног, то зимой, пожалуй, стоит особо заботиться о руках.

Я не сомневаюсь, что этот факт известен всем и мы все используем увлажнительные крема и лосьоны для рук, которые покупаем в магазинах. Но лично мне они не нравятся ... на вкус! Когда я вожусь на кухне, я постоянно мою руки, а это сушит мою кожу и она становится как у черепахи!

В продаже много продуктов, содержащих натуральные ингредиенты, однако, я считаю, если эти продукты не съедобны, то лучше ими не пользоваться во время приготовления пищи.

Итак, я решила попробовать следующие СЪЕДОБНЫЕ средства, которые уже есть на кухне:


1. Сливочное масло- сделать топлёное масло, растопив его на медленном огне. При приготовлении выделяется пенка, снимите её и используйте в качестве крема, когда чуть остынет. Эта пенка очень хорошо впитывается в кожу и делает её мягкой и даже в какой-то степени водонепроницаемой;


2. Оливковое масло- я использовала масло первого отжима, так как оно содержит большее количество витамина Е, что необходимо для защиты кожи. Так как это масло не очень хорошо впитывается, промокните руки бумажной салфеткой после втирания масла;


3. Сметана- нужна жирная сметана. Она лучше впитывается, чем оливковое масло и не только смягчает, но и освежает кожу;


4. Другие растительные масла- миндальное, которое содержит наибольшее количество витамина Е, масло из виноградной косточки или кунжутное масло. Не забудьте промокнуть руки бумажной салфеткой, эти масла текут.


Все эти жирные средства можно использовать и на ночь. Нужно только одеть перчатки, чтобы не запачкать постель.

Carrot's Wild Side

One more recipe for today. I made it yesterday and it's my Rainbow's Orange soup. Although when it's cooked it doesn't look too orange.
Did you know that baby carrots are actually regular carrots cut and rounded on the machines

{3} Roasted Baby Carrots and Wild Rice Сream Soup

2 packs baby carrots
1 cup wild rice
2 cups water for rice
6 cups water for soup
1 bunch fresh herbs (I used parsley and dill), chopped
1/2 cup chopped onions
1/2 cup chopped celery
freshly ground black pepper
sea salt
2 Tablespoons olive oil for roasting
2 Tablespoons olive oil for sautéing


1. Heat oven to 450 degrees F. Arrange carrots on a shallow baking sheet, drizzle with oil. Roast for 20 minutes, tossing once.

2. While carrots are roasting, cook wild rice: combine rice and water in a non-stick pot, bring to boil over high heat, add a dash of sea salt, cover, lower heat to medium and cook for 20 minutes. Thus, when carrots are done, rice should be too. Take rice off the heat and let stand covered.

3. In another pot, sauté onions and celery in heated olive oil until translucent, add roasted carrots, add water and bring to boil. Once boiled, add a dash of sea salt and let simmer for 5 minutes.

4. Take the pot off the heat and blend the soup either with an Immerson blender or in batches in a regular blender and return to the pot.

5. Add cooked rice and bring soup to boil over high heat. Turn the heat off, add chopped herbs, cover and let stand for 5 minutes.

Serve in a bowl and enjoy! You can add some freshly pressed garlic of more ground pepper to your bowl.

Ещё один рецепт на сегодня. Это рецепт оранжевого супа для коллекции Радуга супов. Я его вчера приготовила. Суп из морковки--калиброванной маленькой морковки, которую называют бейби. Я раньше думала, что это действительно молодая маленькая морковка или по крайней мере такой сорт. Однако, как оказалась, это лишь калиброванная обычная большая морковь. Всё равно, эти бейбички слаще!

{3} Суп-пюре из поджаренной в духовке морковки с диким рисом

2 упаковки моркови
1 стакан дикого риса
2 стакана воды для варки риса
6 стаканов воды для супа
1 пучок зелени (я использовал петрушку и укроп), нарезать
1/2 стакана мелко нарезанного лука
1/2 стакана нарезанного сельдерея
свежемолотый черный перец
морская соль
2 столовые ложки оливкового масла для выпекания
2 столовые ложки оливкового масла для тушения

1. Нагреть духовку до 450° F (230° C). Выложить морковь на неглубокий противень и сбрызнуть маслом. Жарить в течение 20 минут, перемешав один раз.

2. Пока морковь жарится в духовке, отварить диким рис: риса и воду поместить в кастрюлю с антипригарным покрытием, довести до кипения на сильном огне, добавить щепотку морской соли, накрыть крышкой, понизить огонь до среднего и варить 20 минут. Так, когда морковь готова, рис должен быть тоже готов. Снять рис с огня и дать постоять под крышкой.

3. В другой кастрюле, потушить лук и сельдерей в нагретом оливковом масле до полупрозрачного состояния, добавить жареную морковь, залить водой и довести до кипения. Как только закипит, добавить щепотку морской соли и проварить в течение 5 минут.

4. Снять кастрюлю с огня и измельчить с помощью ручного блендер или по чуть-чуть в обычном блендере и вернуть в кастрюлю.

5. Добавить вареный рис в суп-пюре и довести до кипения на сильном огне. Выключить огонь, добавить нарезанную зелень, накрыть крышкой и дать постоять 5 минут.

При сервировке, можно добавить толчённый чеснок или ещё немного молотого перца.

Monday is an Easy day, I say

Every Monday, I expect myself to start anew, to finish leftover tasks from last week, to try to push my limits even further during new week. But most of the time it all goes out the window as soon as I open shades in the morning. Oh, well. I'll go with the flow.
Making something easy for dinner is another Monday promise I intend to keep this time. Too bad I didn't make it to the supermarket today. However, I'll work with what I got: Scarcity breeds ingenuity. I have a box of frozen chopped spinach, some grape tomatoes, garlic, pignoli nuts and some sliced cheese. And of course, whole wheat pasta! Plus some spices to make this dish gourmet!

Lemon zest is what give this simple pasta toss a gourmet taste.

Whole wheat Oricchette Pasta with Steamed Spinach, Cherry tomatoes and Pignoli nuts
1 package of Whole Wheat Oricchette pasta
1 10 oz package of frozen chopped spinach
1 pint container cherry tomatoes
1/4 cut pignoli nuts
2 cloves garlic, minced
1/4 teaspoon ground nutmeg
1/2 teaspoon lemon zest
1/2 teaspoon freshly ground black pepper
1 teaspoon coarse sea salt
1/2 cup grated mozzarella cheese
2 Tablespoons extra virgin olive oil

1. Cook pasta according directions on the box

2. While pasta is cooking, in a small saucepan steam frozen spinach with enough water to cover the bottom of the pen. Once it thawed, strain it and return to the pan adding tomatoes, garlic, nutmeg, lemon zest, salt and pepper. Cover and leave it on the low heat, stirring occasionally to prevent burning.

3. When pasta is cooked, stir it with the spinach and add some grated cheese (I had mozzarella slices, so I just cut them in strips) and nuts and dress it all with olive oil. Voilà!

Понедельник день тяжёлый! Каждую неделю я обещаю себе начать жизнь с начала, именно с понедельника, но очень часто это заветное желание сбывается только во вторник.
Хотела закупить продуктов сегодня на всю неделю, но в супермаркет так и не попала.
Вот по сусекам помела, по коробу поскребла и сделала это блюдо на ужин: Макароны «Оричетте» из муки грубого помола с парным шпинатом, помидорами черри и кедровыми орешками. Хочу заметить, что макароны, конечно же, я не готовила сама из теста--были готовые.

1 упаковка (500 гр) макарон «Оричетте» из муки грубого помола
1 упаковка (10 унций) замороженного нарезанного шпината
1 упаковка (500 гр) помидор черри
1/4 стакана кедровых орешков, слегка поджаренных
2 зубчика чеснока
1/4 чайной ложки молотого мускатного ореха
1/2 чайной ложки лимонной цедры
1/2 чайной ложки свежемолотого черного перца
1 чайную ложку крупной морской соли
1/2 стакана тертого сыра моцарелла
2 столовые ложки оливкового масла

1. Отварите макароны по инструкциям соответственно указаниям на упаковке.

2. Пока макароны варятся, в маленькой кастрюле отпарьте замороженный шпинат с таким количеством воды, чтобы полностью закрывало дно. Как только он оттаял, слить лишнюю воду и вернуть в кастрюлю, добавив помидоры, чеснок, мускатный орех, лимонную цедру, соль и перец. Накрыть крышкой и оставить намедленном огне, помешивая, чтобы не пригорело.

3. Когда макароны готовы, перемешать их с овощами и добавить тертый сыр (у меня были уже нарезанные ломтики сыра моцарелла, так что я просто их нарезала на тонкие полоски), орехи и заправить всё с оливковым маслом. Вуаля!
