I just want some sunshine


...as you can tell.
Here's another warm and fruity breakfast idea. Please forgive me for using this barley flour in almost everywhere I make these days. I just happened to like it. Plus the novelty of it didn't wear off yet. Just give me another week! It is good for you, after all.
I'll be short today. Studded with tart cranberry gems these muffins are perfect start for a grey winter weekend. And Tutti-Fruitti!

{7} Cranberry Orange Multigrain Muffins

DRY
3/4 cup whole wheat flour
3/4 cup barley flour
3/4 cup quick oats
2/3 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
pinch of salt
WET
2 whole eggs beaten
1 cup buttermilk
1/3 cup vegetable oil
2 Tablespoons orange zest
1 teaspoon vanilla extract

+1 cup dried unsweetened cranberries
  1. Heat the oven 400°F, line muffin or cupcake pan with paper liners
  2. Combine all DRY ingredients
  3. Mix all the WET ingredients
  4. Beat DRY and WET together until combined (don't over-mix) and fold it cranberries
  5. Fill muffins 2/3 way and bake for 20 minutes or until inserted toothpick comes out dry.

Now, you can use the oranges that you turned bold when collecting the zest for decorating muffins. Peel then and slice across. Put them on each muffin before baking. After, you can sprinkle some granulated sugar or sugar syrup (1/2 cup of confectioner's sugar mixed with 1/4 cup of milk)
You can always substitute barley flour with whole wheat or all purpose flour.

Whey better than just pizza crust

Sorry for the poor picture snapped with my phone but I'm too exited to share this crust recipe with you and I didn't have time to take a nicer photo.

If you have leftover tomato sauce from last night's spaghetti dinner, and especially if it's a home made one, and no one in your family wants to eat pasta two days in a row (happens in mine all the time), then make this easy crust dough and use the sauce to make pizza.
You will need, however, a rather unusual ingredient--whey. I get mine from straining plain yogurt: place a strainer over a glass bowl, line it with paper towel, pour 1 cup (1/2 container) of plain yogurt, cover with a small plate and place a weigh over (the remaining yogurt in the container will do), strain the whey for few hours; or if you have a cheesecloth, put yogurt in the it and hang it over a bowl to collect the whey (this method is faster). You can use the yogurt as you use greek style thick yogurt and now you can use the whey, too.

For the dough you will need:

1 cup whey
1 cup whole wheat flour
1 cup barley flour*
1 cup all purpose flour {plus some more for dusting}
1/4 cup vegetable oil
1 Tablespoon white sugar
1 teaspoon baking soda
Pinch of salt

1. In a glass bowl mix together whey, sugar, salt, oil and baking soda.
2. In another bowl, mix together whole wheat and barley flour and stir in the whey mixture, stirring with a wooden spoon until all combines to make the "sponge".
3. On a clean and dry surface, spill one cup of all purpose flour, add the "sponge" and knead the dough with your hands until all the flour is done.
4. Cover the dough with a clean kitchen towel and let rest while you prepare the topping.

Topping must include your leftover sauce and cheese (I used 8 oz ball of fresh mozzarella) and the rest is up to you. I added Kalamata olives and fresh basil.

5. After the topping is all ready (chopped), heat the oven to 425 °F
6. Divide the dough into two pieces, dust the surface with flour and roll out the crusts 1/4 inch thick, poke some holes for air to escape.
7. Place the crusts in the preheated oven for 5 minutes. Remove and add the topping. Drizzle with olive oil and bake pizza at 425°F for 20 minutes.

I will have to repeat it again and maybe describe the process with better pictorial.

*The use of barley flour is not necessary. I used it because I had it on hand. You can sub it with another cup of whole wheat.

Kompot from your pot


With all the recent talk about high fructose corn syrup, I decided to put my two cents in it... So it goes: it's bad for you and your young offsprings in so many ways. Just ban it, and everything that has it from your life.

This little conniving ingredient is in almost every soft drink kids love to quench their thirst with. And as any mother knows it is not easy to cut these juices, punches and colas out of kid's diet--who wants to pack school lunch with plain water???

There is an array of HFCS free products out there but why not make your own? Don't be discouraged by extra work you'd need to do. Once you get a hang of it, you will be able to do it with your eyes closed. Although, I don't recommend closing eyes in the process.

So, there's a drink called Kompot? It's a drink of my childhood. Before there was Fanta or Cola, we used to drink this sweet concoction made by our moms and grandmothers. Why not drink it now or make it for your kids? No time you say? The version I'm about to introduce to you doesn't require much of it.

Here it goes--

Take 2 10-12 oz packs of frozen fruit/berries of your choice (mixed berries, peaches, blueberries and my favorite sweet cherries work best), empty them into stock pot filled with 8 cups of water, add 1 cup of sugar and bring it all to a boil with lid on. Once the water is boiling and trying to escape through the lid, turn the heat off and voila! You got yourself a delicious fruit/berry drink.

No HFCS but lots of flavor and love!

Once it cools down poor it into jugs/bottles/pitchers w/lids and store in the fridge.

Barley—a grain of wisdom


My girlfriend’s physician recently prescribed her a special diet. This diet is to avoid animals’ fats and starch, eat plenty of vegetables and fruits, so that their fiber will cleanse the body of toxins; plus it includes whole grains. However, it seems her ration of grains is limited to brown rice and legumes. That is when I remembered about barley...

Back in my home country, when I was little, they served pearl barley porridge for breakfast almost every day at our day care center. Oh boy, how much we scorned it! I remember the most quick-witted kids would fill their mouth with porridge, run to the bathroom, and spit it out!

Nevertheless, barley is one of the oldest crops cultivated by humankind. Ancient healers already knew its vast medicinal properties. This culture grows in almost every corner of the globe.

Barley contains exactly the bioactive agents, such as vitamins, macro- and micronutrients, dietary fiber, which are imperative for the whole well-being.

We often hear from various experts that the dietary fiber is very important for our digestive health. Barley grain consists at 5-6% of such fiber. Dietary fiber improves digestion and removes all harmful cleavage products from our bodies. Here is your de-tox ingredient!

Barley grain consists at 65% of carbohydrates. That is why a bowl of barley porridge for breakfast can give us energy for he whole day! Besides, barley contains more than 10% of protein, which nutritional value is higher than of wheat protein. Do not forget that plant protein is absorbed by our system at almost 100% in contrast to the animal protein.

Moreover, there is a lot of needed by our body minerals in barley, most importantly phosphorus, which is imperative not only for our metabolism, but also for our brain. Besides, barley grain is a little multivitamin capsule, containing natural calcium, potassium, zinc, manganese and iron, as well as copper, silicon, nickel, molybdenum, magnesium, iodine, bromine, cobalt, strontium and chrome. I had no idea until I researched and I still don’t know half of these elements! However, I know for sure that barley with such a rich content of beneficial minerals together with full complex of vitamins—vitamin A, almost all group of vitamin B, vitamins D, E, PP—is a real natural multivitamin! Can your synthetic vitamin pills do that?

Here is more I found in different sources:

One of barley unique propertied is an ability to cleanse the body of toxins and wastes. By simply consuming barley dishes, you can get rid of allergies.

Barley grain contains natural antibacterial agents, including lysine (an essential amino acid for protein formation) that provides an antiviral effect. Many dietary supplements and cold sore medicine are based on lysine. And it’s extracted from barley. So why buy dietary supplements (which ingredients do not always correspond to the ingredient list on the package) when you can add barley dishes to your diet (pear barley is less effective since it’s hulled)

And there’s more—

If you wash your feet with barley water (soak barley in plain water), you can get rid of fungi. Many of anti-fungal medicine are based on barley.

Back in the day, barley was used to treat constipation and excess weight, cough, and cold. Today barley is recommended to patience with diabetes and arthritis, for gallbladder and bladder diseases, kidney, and liver problems. Barley also helps with prostatitis and hemorrhoids.

What a miracle grain!

There’s one miner drawback, however. Frankly speaking, barley does not look or tastes quite appetizing, especially for those of us trying it for the firs time. But, this is not a problem. We will start with this simple recipe—Barley soup, where barley bare taste is infused with others, which makes it easier to become acquainted with this miracle grain. Then, I’ll take on that morning porridge makeover!

Barley can be pre-soaked in cold water for 3-4 hours to speed up the cooking process.

{4} Barley vegetable soup

1 cup chopped celery
1 cup chopped into coins carrots
1 cup diced onions
2-3 cloves of garlic, crushed
1 can (16 oz) diced tomatoes with juice
1 cup uncooked barley, washed and rinsed (or soaked and drained)
8 cups water (or vegetable stock)
2 dry bay leaves
1 medium dry red chili pepper
1 tablespoons dry parsley/½ cup chopped fresh parsley
1 tablespoon dry dill weed
1 teaspoon turmeric (for color)
Salt and ground black pepper to taste
2 tablespoons olive oil

  1. In the pot, heat oil and sauté onions, celery, carrots and garlic for 5 minutes or until onion is translucent.
  2. Add tomatoes with the juice.
  3. Add dry spices: bay leaves, red chili, and parsley, if using dry one.
  4. Add barley, mix until covered, and then pour water over it.
  5. Bring to boil, add salt and black pepper.
  6. Lower the heat to med-low, cover and cook for 40 minutes if using soaked grain or for an hour and a half if using dry; until barley is cooked through (it will double in size and will be soft to bite).
  7. Before serving, remove the bay leaves and add some fresh chopped parsley, if using.

This is a perfect hearty and healthy meal for a cold winter afternoon. If you wish to make it a main course, you can add homemade precooked meatballs. Just add them to the pot before adding barley. You can also cook this soup in a slow cooker—add all the ingredients at once, pour water and cook according your slow cooker intrusions until barley is fully cooked. On the following day, soup might thicken; just add water and adjust salt when heating up.

Моя подруга недавно села на специальную диету, которую ей порекомендовал её лечащий врач. Эта диета заключается в том, чтобы избегать животные жир и крахмал, кушать побольше овощей, дабы с помощью их клетчатки очистить организм от шлаков, и фруктов. Плюс цельные зерновые культуры. Но похоже, её рацион круп ограничился коричневым рисом и бобами. Я вот вспомнила про перловку…

В детском саду нам почти каждое утро давали на завтрак кашу перловку. Мы её просто не переносили. Самые сообразительные детки набивали ею рот и бежали в туалет, чтобы выплюнуть!

Однако ячмень—это одна из самых древних культур, возделываемых человеком. Его лечебные свойства были известны еще древним лекарям. Эта культура прорастает почти в каждом уголке земного шара.

Ячмень содержит в себе именно те биологически активные компоненты: витамины, макро- и микроэлементы, клетчатку, которые так необходимы человеку для полноценной жизнедеятельности и здоровья.

Мы часто слышим от разных специалистов о том, насколько необходимо потребление клетчатки для здоровья нашей пищеварительной системы. Ячменное зерно на 5-6% состоит из клетчатки. Клетчатка нормализует пищеварение и выводит из организма все вредные продукты распада. Вот вам и средство для де-токса.

Зерно ячменя на 65% состоит из углеводов. Именно поэтому, порция ячменной каши с утра заряжает нас бодростью на целый день! По мимо этого, ячмень содержит более 10% белка, который по своей пищевой ценности превосходит пшеничный белок. Не стоит забывать, что растительный белок, в отличии от животного, усваивается нашим организмом практически на 100%.

Ну и не мало в ячмене минералов, необходимых нашему организму, а главное фосфора, который необходим нам не только для нормального обмена веществ в организме, а так же для работы нашего мозга. Кроме того, ячменные зёрнышки—это таблеточки мультивитамина, содержащие в природном виде кальций, калий, цинк, марганец и железо, а так же медь, кремний, никель, молибден, магний, йод, бром, кобальт, стронций и хром. Я и представления не имела, пока не провела расследования, и до сих пор не знаю половины элементов! Но знаю точно, что ячмень при таком содержании полезных минералов наряду с полным набором витаминов—витамин А, почти все витамины группы В, витамины D, E, PP—это настоящий природный мультивитамин! Разве синтетические, мёртвые мультивитамины так могут?

А вот, что я раскопала про ячмень в разных источниках:

К уникальным свойствам ячменя можно отнести и его способность очищать организм от токсинов и шлаков. Простым употреблением ячменных блюд можно избавиться от аллергии.

В зернах ячменя содержатся природные антибактериальные вещества, в том числе и лизин (незаменимая аминокислота для образования белка), оказывающий противовирусное действие. На основе лизина сейчас изготавливаются всевозможные БАДы (биологически-активные добавки) и антигерпесные препараты. А берут его из того же ячменя. Зачем покупать БАДы (состав которых, чаще всего, не соответствует заявленному на упаковке), когда можно ввести в свой рацион блюда из ячменя (перловка менее полезна, т.к. с нее снята оболочка).

И ещё—

Если водой, в которой замачивался ячмень мыть ноги, можно избавиться от грибка. Большинство препаратов для лечения грибковых заболеваний делаются на основе того же ячменя.

В старину при помощи ячменя избавлялись от запоров и лишнего веса, от кашля и простуды. Сегодня ячмень рекомендуют больным диабетом и артритом, при заболеваниях желчного и мочевого пузырей, почек и печени. Ячмень помогает при простатите и геморрое.

Вот так чудо зёрнышко!

Теперь понятно, почему в детстве в садиках почти каждое утро подавали перловку. Только если бы я тогда знала, что знаю сейчас, уплетала бы эту кашу за обе щёки!

Один лишь недостаток—откровенно говоря, ячмень не совсем аппетитен на вид и вкус. Но это поправимо! Сегодня я поделюсь простым рецептом—супом с ячменным зерном, так как в супе вкус ячменя перекликается с другими и для начинающих “ячменоедов” так будет легче привыкнуть к этому чудо-зёрнышку. А затем возьмусь за эту перловку на завтрак!

Предварительно зерно можно замачить в холодной воде в течении 3-4 часов, чтобы ускорить процесс приготовления.

Этот рецепт будет «красным» в моей коллекции «Радуга Супов»!

{4} Овощной постный суп с ячменным зерном

1 стакан нарезанного сельдерея
1 стакан нарезанной копейками моркови
1 стакан мелко нарезанного лука
2-3 зубчика чеснока, разтолчить

1 (500 гр) банка нарезанных томатов в собственном соку
1 стакан ячменного зерна, промытого в проточной холодной воде
2 литра воды (или овощного бульона)
2 сухих лавровых листа
1 средний сухой красный перец чили
1 чайная ложка куркумы (для цвета)
1 столовая ложка сухой зелени укропа
1 столовая ложка сухой петрушки/пол стакана мелко нарезанной свежей
Соль, молотый чёрный перец по вкусу
2 столовые ложки оливкового масла


  1. В кастрюле разогреть масло и добавить лук, морковь, сельдерей и чеснок. Тушить на низком огне с закрытой крышкой в течении 5 минут или пока лук не станет прозрачным.
  2. Добавить томаты с соком.
  3. Добавить специи: лавровый лист, чили перец и петрушку, если используете сухую.
  4. Добавить ячмень и перемешать, чтобы зёрна покрылись маслом и залить водой.
  5. Довести до кипения на полном огне, посолить и поперчить.
  6. Закрыть крышкой и варить на низком огне в течении 40 минут, если используете замоченое зерно или в течении полутора часа—если сухое; до тех пор, пока не сварится крупа (она в два раза увеличится в размере и будет мягкой на зуб).
  7. Перед подачей вынуть лавровый лист и чили, посыпать свежей зеленью петрушки, при желании.

Этот суп будет отличным первым блюдом холодным зимним днём—он полезен и питателен. Если желаете сделать его основным блюдом на ужин, добавьте домашние фрикадельки. Этот суп так же можно приготовить в мультиварке: заложите все ингредиенты и залейте водой; варите в соответствии с инструкцией мультиварки до тех пор, пока не проварится зерно. На следующий день суп может загустеть; в этом случае добавьте воды и соли по вкусу при подогреве.

Пестики- тычинки

Принято считать, что женщинам, никогда не угодить, и что они очень требовательны. Однако, встретив мужчину своей мечты, женщина, как правило, успокаивается. Но у мужчин это не так—у них постоянная потребность как минимум в четырёх женщинах; и не нужно быть Фрейдом, чтобы понять, что всё это идёт из детства!

В младенчестве его окружает мать; это женщина, которая с рождения заботится, кормит и ухаживает, печётся об удобстве и благополучии, полностью посвящая своё существование своему чаду.

В начальной школе появляется учительница; это наставница, которая в нужную минуту, когда он сам в растерянности, скажет, что делать, как правильно решить задачу, наградит за отлично выполненную работу и накажет за плохое поведение;

В ранней юности—это подружка. Это женщина, с которой можно поделиться любыми секретами, планами и просто поболтать о насущном. Она всегда разделит его интересы, поддержит и даст дельный совет.

Ну а в юности—это женщина соблазнительница, воплощающая в себе всё его фантазии; она безпредрассудочна и креативна в интимных отношениях.

Один пестик, несколько тычинок!

Не удивительно, что во многих культурах практикуется многожёнство. Получается женщина, став женой, должна как минимум выполнять функцию четырёх; а если ей не удаётся, то муж будет искать на стороне! А ещё говорят, что мы, женщины, требовательны!

It is believed that women are hard to please, and they are very demanding. Nevertheless, having met the man of her dreams, she is usually satisfied with her choice. However, men have a constant need for at least four women, and you don not have to be Freud to understand that all this comes from his childhood!

Being an infant he is surrounded by mother—a woman that from birth provides, feeds and cares, making sure of his comfort and well being, fully devoting her existence to his needs.

During elementary school, he has a teacher. This woman is his mentor that when the moment is right will tell him what to do, point him in the right direction, reward him for his efforts and punish him for his misbehavior.

In early adolescence, it is his sweet girlfriend. She is the one he can confide all his secrets, dreams and just have a profound conversation. She always shares his interest, supports him, and gives him a practical advice.

And of course in his youth, it is a beautiful seductress, an embodiment of all his wild fantasies; she is unprecedented and creative in intimate relationships.

It is not surprising that some cultures practice polygamy. It seems that once woman becomes a wife, she has at least four roles to fulfill; if not, he will start looking outside. And they say we, women, are demanding!

Orange and Ginger Pancakes

In places, where winter takes on its full forth it isn't easy to enjoy the weather. But as my dear friend pointed out yesterday, nature has no bad weather--we should accept and enjoy it. I think all we need is to add a little sunshine!

Flavors like ginger, honey and zesty orange make these pancakes a sunshine on a plate: warm, yellow and tasty! To add more warmth, I served it with orange slices. If sun had a taste, it would definitely taste like ginger, orange and honey!

The only "set back" for this recipe is that you need to shave the oranges, carefully! You only need the top layer of the zest. It is where all the oil and flavor is stored. The pith (white layer) is bitter and can ruin the recipe. That's why you would need to use fine Microplane zester/grater. It might seem a bit expensive, but trust me, it is totally worth it because you can use this "magic wand" for many kitchen tasks! After shaving the oranges, peel them and segment. Squeeze the juice into the bowl with slices and set aside.

{6} Orange Ginger Pankakes


WET:
16 oz buttermilk room t°
1/3 light vegetable oil (I used grape seed oil here)
Grated zest of 2 medium oranges (save these oranges for garnishing)
2 whole large eggs, beaten
DRY:
1/2 cup all purpose flour
1 cup whole wheat flour
2 teaspoons baking powder
1/2 teaspoon balking soda
pinch of salt
2 tablespoons white sugar
2 teaspoons ground ginger

1. Mix WET ingredients and whisk them until combined;
2. Mix DRY ingredients and add them to WET mixing with a whisk until all incorporated, don't over-mix; let stand until griddle is ready;
3. Heat a non-stick pancake griddle;
4. Measure 1/4 cup batter and pour on the hot griddle. Flip when bubbles appear and fry the other side.
5. Serve drizzled with honey and topped with orange segments, enjoy!

Neat Balls Meat Balls

Good things come in a circular motion or at least in round shape. Universal little protein spheres are so easy to make at home I wonder how do they still make money selling packaged frozen ones?
You can make them with any ground red meat, chicken or turkey. Add any spices your family prefers: dry herbs- thyme+rosemary+oregano+marjoram for Italian taste; ground ginger+cayenne+turmeric for Asian twist; allspice+cinnamon for North African. And then toss them in any dinner dish! They turn any soup or any side into a main course. If that doesn't sound multitasking enough--you can also serve meatballs as appetizers. Cook them one day and freeze them yourself with out all the extra ingredients, whose name I'd almost impossible to pronounce.
Today I'm sharing my favorite go-with-everything formula: ground thyme+ground coriander+cayenne pepper+ground garlic+black pepper+salt. These spices go with everything - pasta, rice, vegetables. And I use instant oatmeal in lieu of bread crumbs to make the meatballs "bouncy"
To measure these little multitaskers in the same shape I use cookie scoop--another multitasker--and then let the kids shape meat into balls (make sure they don't eat raw meat!)
The recipe below is only for one batch, double the ingredients if you need to make more.

Bouncy Baked Meatballs

About 1 1/4 lb ground beef
1 teaspoon ground thyme
1 teaspoon ground coriander
1 teaspoon ground black pepper
1 teaspoon sea salt
1 teaspoon garlic powder
1/4 teaspoon ground cayenne pepper
1 whole large egg
1/2 cup instant quick plain oatmeal

1. Heat oven to 350° F.
2. Mix spices together and add to meat; add beaten egg and oatmeal and mix it.
3. With a cookie scoop (#50) scoop meat and shape into balls
4. Arrange meatballs on an ungreased cookie sheet and bake for 30 minutes

Now you can cool the meatballs and freeze them in a freezer bag/container for a month. Or use it right away. That's what I did! I made a meatball wild rice pilaf: combine 1 cup of wild rice with 2 cups of water in a pot and bring to boil. Add salt to taste, cover, lower the heat to medium and cook for 50 minutes. Last 10 minutes of cooking add a pack of frozen mixed veggies, cover, let the rice cook through. Turn off the heat, add meatballs to the pot, cover and let stand for 10 minutes. Serve and enjoy!

Хорошее ходит по кругу или, по крайней мере, приходит в круглой форме. Вот и универсальные маленькие кругляшки чистого белка так легко сделать в домашних условиях, что я удивляюсь, почему в магазинах до сих пор продают упакованные и замороженные?
Вы можете сделать их из любого молотого красного мяса, курицы или индейки. Добавьте специи, которые вам и вашей семье по вкусу: сухие травы тимьяна+ розмарин+орегано+майоран для итальянского вкуса; молотый имбирь+острый красный перец+куркума для азиатского оттенка; душистый перец+корица для северо-африканской ноты. Их можно добавить в блюда на обед или ужин! Они превращают любой суп или любой гарнир в основное блюдо. Если этого не достаточно - выможете также подавать фрикадельки отдельно в качестве закуски. Приготовьте один раз и заморозьте на целый месяц безо всяких добавочный суррогатов и консервантов.
Сегодня я поделюсь своей любимой формулой, которая подходит ко всем блюдам: молотые семена тимьяна+молотый кориандр+молотый красный острый (кайен) перец+чесночный порошок+молотый чёрный перец+соль. Эти специи подходят ко всему - макаронные изделия, рис, овощи... Замечу, что я использую овсяные хлопья вместо панировочных сухарей, чтобы сделать фрикадельки более "оживленными"
Для равномерности размера этих маленьких шариков я использую специальную ложку для выпечки и пусть дети формируют фрикадельки.

Запеченные Фрикадельки

600 гр говяжьего фарша
1 чайная ложка молотого тимьяна
1 чайная ложка молотого кориандра
1 чайная ложка молотого черного перца
1 чайную ложку морской соли
1 чайная ложка чесночного порошка
1/4 чайной ложки молотого острого красного перца
1 целое большое яйцо
1/2 стакана простых овсяных хлопьев

. Разогрейте духовку до 350° F (180
° С).
2. Смешайте специи и добавьте их в фарш, затем добавьте взбитое яйцо и овсяные хлопья и все перемешайте.
3. С помощью специальной ложечки для выпечки отмерьте фарш и сформируйте в шарики (здесь можно задействовать детей--им понравится, только следите, чтоб они фарш сырым не ели)
4. Выложите фрикадельки на не смазанный противень и выпекайте в течение 30 минут.

Теперь, остудив фрикадельки, можно их упаковать в специальные кульки для морозилки и заморозить со сроком на месяц. А можно и сразу в блюдо. Я сделала плов из дикого риса и фрикаделек: отварила 1 стакан риса в 2 стаканах воды, после кипения--посолить и накрыть крышкой, понизив огонь до среднего, варила 50 минут; за последние 10 минут я добавила одну упаковку (прибл. 500 гр) замороженных смешанных овощей, накрыла крышку и доварила рис; после, добавила фрикадельки в кастрюлю и дала плову постоять 10 минут на плите, но без огня и при закрытой крышке. Вот и всё--красиво и вкусно!

Mashed Cannellini

We crave carbs during winter. What is a better source than straight up starch of potato?! But as much as I respect potatoes, sometimes I need to take it easy on starch.
My daughter once told me that potatoes and beans have the same taste. Although I disagree with her, she's could be right, especially comparing the textures.
So one day, I was cooking beans to make a salad and I over cooked them! Nothing looks nice when overcooked, but it happens. I remembered the comparison my daughter made and decided to just mash them. Canned beans could be heated and used as well (but I'm not a fan of can).
Mashed Cannellini Beans


16 oz (1 package) dry Cannellini beans, soaked overnight, rinsed, drained and overcooked
1 medium onion, finely chopped
2-3 cloves garlic, minced
1 cup plain yogurt
1 Tablespoon butter
2 Tablespoons vegetable/olive oil
2 teaspoon ground cumin
Sea salt }to taste
Ground black pepper }to taste

Soak dry beans overnight then drain and rinse. Put in the pot, cover with about 6-8 cups of water and bring to boil over high heat. When boiled, add salt, lower the heat and cook for 40 to 50 minutes- to overcook: you will notice that the beans are skinned and look mushy.

While beans are cooking, heat oil and melt butter in it; sauté onions and garlic in the oil until onions turn light brown. Add salt, pepper and cumin. Remove from heat, set aside.

With an immersion blender or in a food processor mash beans with yogurt until well combined. Add onions. Serve as a side dish in lieu of mash potatoes.

Зимой наш организм требует углеводов. И что может быть лучше и привычнее картофельного крахмала?! Но не смотря на то, что я уважаю картошку, иногда мне нужно быть немного по осторожнее с крахмалом.
Моя дочка однажды заметила, что картофель и фасоль имеют одинаковый вкус. Хотя я с ней не совсем согласна, она может быть и права, особенно, если сравнивать их текстуру.
Вот в один прекрасный день, я решила приготовить белую фасоль, чтобы сделать салат, и перестаралась--переварила фасоль! Я вспомнила сравнение, которое делала дочка и решила просто смять фасоль в пюре.
Можно использовать подогретую консервированную фасоль, но лучше сварить, то есть переварить сухую.

Пюре из белой фасоли Каннеллини

1 упаковка (900 гр) сухой белой фасоли, замоченной на ночь, промыть, осушить и переварить
1 мелко нарезанная средняя луковица,
2-3 зубчика чеснока, растолчить
1 чашка обычного йогурта
1 столовая ложка сливочного масла
2 столовые ложки растительного/оливкового масла
2 чайной ложки молотой зиры (римский тмин)
Морская соль по вкусу
Молотый черный перец по вкусу

Замочить фасоль на ночь, затем слить воду и прополоскать. Положить в кастрюлю, залить 6-8 стаканами воды и довести до кипения на сильном огне. При кипячении, добавить соль, уменьшите огонь и варить в течение 40 до 50 минут, чтобы переварить: вы заметите, что у фасоли отделилась кожица и она размякла.

Пока варится фасоль, растопить сливочное масло в подогретом растительном, поджарить
лук и чеснок в масле до золотистого цвета. Добавить соль, перец и тмин. Снять с огня.

Ручным блендером или кухонном комбайне размять в пюре фасоль с йогуртом. Добавить лук в масле. Подавать в качестве гарнира вместо картофельного пюре.

Pasta: Adyga Millet Spoon Bread

Despite its name, this dish has nothing to do with macaroni or even Italian cuisine. This is the bread of my people- Adyga [pronounced: ah-dyh-ga], or else known Circassians. It is an ancient recipe that our forefathers, or rather foreMOTHERS were making for ages.
The grain used is millet. It is wide known as fodder, but it is totally suitable for humans! And it's full of nutrients, too! Packed with proteins and vitamins, such as vitamin B, niacin, B6 and folic acid, minerals such as calcium, iron, potassium, magnesium, and zinc, it contains no gluten and although it could not be used for regular breads, it could easily replace any grain in your pantry.
Circassians had been cultivating this grain perhaps for as long as the history knows of them. They used it in soups, as breakfast cereal and to make this unique bread- Pasta, which was served with practically everything: meat dishes, poultry, cheese...
Regardless of its deep rooted history, this dish is very easy to make. There are very few ways to cook Adyga Pasta, but they all call for not more than 3 ingredients: water, millet and flour. I cook it without any flour. Note that pasta is never cooked with salt! The hardest part of cooking pasta is the cleanup!

Adyga Pasta
1 cups Millet picked and rinsed in cold water
3 cups water
Hand pick millet for any unhulled grain, wash with cold tap water and drain. Use a hard anodized stock pot (or any pot you use to cook rice in, but not Tefal), pour millet and water, cover and bring to boil over hight heat. Once boiled, take the top off, lower the heat to medium and cook for about 30 minutes or until grain is all cooked and most of the water is evaporated, stirring with a wooden spoon (if you don't stir, pasta will end up on the floor!). If water evaporates before the grain is cooked, add 1/4 cup more at a time until millet is cooked. Remove from the pot into a pan (I used lasagna pan) and tamp down with a wooden spoon or wet hands. I personally prefer hands! (beware, it is hot) Let cool. Usually when it cools down a crust appears on top. Usually it's not edible. To avoid it, cover pasta with a layer of cling wrap while it's still warm. Once cooled down, cut pasta into 2 inch strips and serve warm or cold.
